Skriveno carstvo
Boravak u prirodi dokazano je dobar za ljudsko zdravlje zbog više faktora koje samo priroda nudi: čist i svjež zrak, izoliranost od određenog broja antropogenih polucija, svježa voda i hrana. Hrana u šumi se nalazi u raznim oblicima u koliko je znamo pronaći, međutim, postoji jedno skriveno carstvo koji pruža velike i skupocjene gastronomske specijalitete. Radi se o carstvu gljiva. Kao veliki ljubitelj gastronomije, što se vidi u zadnje vrijeme na mom fizičkom izgledu (posebno poslije zime) i po tome što mnogo volim da eksprimentišem u kuhinji, gljive za mene predstavljaju poseban izazov. Taj izazov se ogleda u tome što je prvo potrebno pronaći gljive a zatim pažljivo ih odabrati i tek na kraju nagraditi se kvalitetnim obrokom.

Cantharellus cibarius – hidden emerald
Pronalazak gljiva, naravno, odvija se u prirodi, na različitim vrstama terena i raznim skrivenim lokacijama – koliko daleko smo spremni da idemo to je veća nagrada, jedno od pravila pronalaska gljiva koje se treba primjeniti na život. Drugi korak je da ne izaberete gljive koje će vas koštati života ili zdravlja, to se nadam da svi već znate ali nikada nije na odmet napomenuti. Dakle, postoji veliki broj otrovnih vrsta gljiva na teritoriji Bosne i Hercegovine koje ću više opisivati kroz druge postove o gljivama, jer često u toku sezone tražim gljive tako da će one biti česta tema.
Izuzetno je malo podataka koji govore o prisustvu i rasprostranjenosti vrsta gljiva na prostoru Bosne i Hercegovine. Prve spoznaje potiču od znamenitog istraživača Karla Maly-a, čiji se dugogodišnji rad na mjestu kustosa u Zemaljskom muzeju BiH odnosio kako na više biljke, tako i na gljive i lišajeve. Na osnovu njegovih podataka napisan je i jedan od prvih mikoloških radova u BiH i evropskim časopisima tog doba, od kojih je najznačajniji „Additamenta ad flora Balcanica mycologicam“ . Pretpostavlja se da u Bosni i Hercegovini živi oko 15.000 – 20.000 vrsta gljiva. Međutim, poznato je svega 549 vrsta.
Moje najdraže vrste su ujedno i one koje su najsigurnije za raspoznavanje, koje nemaju izgledom sličnih otrvnica i koje se ubrajaju u najukusnije gljive u gastronomiji. To su:
Vrganj (lat. Boletus edulis)
Lisičarka (Cantharellus cibarius)
Kozara ili Sunčanica (Macrolepiota procera)
Trubača (Craterellus cornucopioides)

Ovo bi bio uvodni post za rubriku “skriveno carstvo” tako da uskoro, početkom sezone “lova na gljive”, možete da očekujete brojna lutanja, nove vrste gljiva, njihove opise i mnoge recepte za njihovu pripremu.
Hidden empire
Spending time in nature is proven to be good for human health due to several factors that nature offers: pure and fresh air, isolation from a number of human caused pollutions, fresh water and food. The food in the forest is in various forms if we know how to find it, however, there is one hidden empire that offers great and expensive gastronomic specialties. It’s the empire of the fungus. As a great fan of gastronomy, seen recently in my physical appearance (especially after winter) and by the fact that I love to express myself in the kitchen, mushrooms for me are a special challenge. This challenge is reflected in the need to locate the mushrooms first and then carefully select them. Reward follows last after these steps in form of delicious meal.

Finding mushrooms, of course, takes place in nature, on different types of terrain and in various hidden locations – how far we are ready to go is a bigger prize, one of the mushroom finding rules that can be applied on whole human life. The second step is not to choose mushrooms that will cost you life or health, I hope you all already know, but it’s important to emphasize once more. So there is a large number of poisonous fungus on the territory of Bosnia and Herzegovina that will be described more through other mushroom postings, because I often search for mushrooms during the season so mushrooms are going to be a more common topic.
There is very little information about the presence and spread of mushroom species on the territory of Bosnia and Herzegovina. The first discoveries are inspired by renowned researcher Karl Maly, whose long years of work at the curator site in the National Museum of Bosnia and Herzegovina has affected both plants, mushrooms and lichens.One of the first mycological works in Bosnia and Herzegovina and the European periodicals of that time was written on the basis of his data, the most important of which being the “Additamenta ad flora Balcanica mycologicam”. It is estimated that around 15,000-20,000 species of mushrooms live in Bosnia and Herzegovina. However, only 549 species are known.
My favorite types of fungi are also the ones that are the safest in terms of recognitions, which do not look similar to the poisonous types of fungi and are among the most delicious mushrooms in gastronomy. These are:
